Rainbow Bread

This bread is great for kids sandwiches and this same dough can be used to make monkey bread, cinnamon rolls, or dinner rolls.
Ingredients:
1 1/4 cups water
1 tablespoon sugar
1 teaspoon salt
3 1/2 cups flour
1 1/4 teaspoons yeast
1. In the bowl of a stand mixer with hook attachment, dissolve sugar in warm water (105 degrees F) add yeast stir gently with a wooden spoon and let sit for 10 minutes.
2. Add flour and salt to mixing bowl, mix on low speed until flour is completely incorporated into dough and continue mixing on medium speed for 3 minutes, until dough is no longer sticky and dough springs back when pressed.
3. Cover dough with a clean towel and let rise in a warm place for 1 hour, until dough has doubled in size.
4. Punch dough down to remove all air bubbles.
To Color:
1. Divide dough into 4 or 5 equal parts, make a well in a piece of the dough with your finger. Put food colouring into the well. Use about 10-15 drops.   Pinch the well closed and knead the dough for 5 to 10 minutes, until the color is evenly distributed. Repeat with other colors with the remaining dough.
2. Using a rolling pin, roll each colored dough into a rectangle and moisten the top of one piece so the next piece will adhere to it.
3. Roll the dough into a log and place it in a greased bread pan. Let rise for 45 to 60 minutes until dough is doubled.
4. Preheat oven to 350 degrees F. Bake loaf for about 25 minutes (check after 20 minutes).
5. Invert bread from pan immediately when done, tap on the bottom of loaf it should sound hollow. If it does not, it is not done cooking yet.
6. Cool 10-20 minutes before cutting.
